5 Methods to Brew Ground Coffee in a Cup

If you don’t have a coffee machine, Cezve, or even a French press on hand – this is not a reason to abandon natural coffee in favor of instant coffee. Delicious coffee can be brewed directly in the cup, and for this, you do not even always need boiling water.


History Reference

In the XVIII century, Europe already loved coffee but did not like to brew it in a Cezve Turk. The fact is that gourmets from the very beginning tried to avoid boiling during the preparation of the drink.

Here is a popular way to make a drink in those days: ground coffee were poured into a coffee pot, poured them with hot water and insisted. So that the grains did not fall into the drink, coffee was placed in a linen bag – an analog of the current paper bag.

But in the 19th century, there were so many coffee makers of various designs that almost forgot this ancient method of preparation. However, professional coffee tasters, in spite of fashionable trends, always preferred to brew a drink in the old way – right in the cup: this is how all the taste advantages and disadvantages of beans are best manifested.

The fashion for brewing ground beans in a cup returned in the 90s of the XX century when consumers were already fed up with instant coffee, but due to lack of time, they could not always use a coffee maker.

Preparation For Brewing Coffee In A Cup


All methods of brewing natural coffee in a cup are similar: ground beans are poured into a vessel, they are poured with water and insisted. Depending on the method, the water can be both hot and cold. In any case, it is undesirable to use chlorinated or boiled water: it will spoil the taste of the drink.

Water should be soft: bottled, spring or well. The preferred degree of mineralization is 150 mg/l, but this is not important: the main thing is that it be in the range of 75 to 250 mg/l.

If a prescription needs hot water, it should be brought to the “white key” state, that is, heat until the first bubbles appear and the kettle begins to make noise. After turning off the kettle, wait 1-2 minutes. During this time, the water in the kettle will cool to the desired temperature.

It is better to make coffee in ceramic or earthenware cups. To get a serving of 80–110 ml, the volume of the cup should be at least 120–150 ml, otherwise the swollen thick will displace the water.

Before brewing, you need to warm the mug, rinsing with boiling water: then the drink will cool more slowly.

Type of Coffee Beans


Old-school lovers claim that real coffee should be made exclusively from freshly ground beans. In some ways they are right, but in practice, it is difficult to use a coffee grinder in the office or at home in the morning. It doesn’t matter: there are many brands of ground coffee on sale. It is important only every time after preparing the drink to tightly close the pack so that the aroma does not disappear.

Usually, ground coffee for brewing in a cup is marked accordingly. If not – it is better to choose beans of fine or medium grinding. If the beans are ground too rough – grains will float, they will have to be caught with a spoon. Beans, ground into dust, are an amateur: the smallest particles from a suspension.

If you want to treat yourself to an unusual taste, you can buy ground coffee in a specialty store or in a coffee shop where beans are ground right before the sale, at the request of the buyer.

When brewing in a cup, the taste of drinks is well manifested:

  • fruit shades (currants, prunes) are typical for Ethiopian and Yemen Arabica;
  • Brazilian arabica – soft, with moderate acidity;
  • in alpine South American arabica citrus and chocolate notes are felt;
  • Kenyan and Indian Arabica has a chocolate flavor.

When buying ground coffee in packs, you need to pay attention to the content of robusta: it is better if it is not. Brewing in a cup lasts a long time, because of which coffee, even from pure Arabica coffee, is strong enough.

Robusta not only gives the drink an extra strength but also makes the taste more bitter. If an espresso mixture is used for brewing in a cup, the content of robusta should not exceed 10-15%.

Cup Brewing Methods

Ground beans are measured with a spoon. In one teaspoon (without a slide) 3 g of fine-ground coffee is placed, with a slide – 5-6 g.

There are 5 basic brewing methods:

  • Brazilian;
  • Polish;
  • Cuban;
  • in the microwave;
  • cold (cold pants).

Coffee brewed in a cup can be mixed with milk, syrups, garnished with cream.

Brazilian Way

So professional tasters make a drink. Need coarse grinding (as for a French press).

Ground beans are placed in a heated cup and poured with hot water. Approximate dosage: 8–9 g of ground beans per 100 ml of water. The infusion lasts 4-5 minutes.

During this time, large particles float to the surface, forming a “crust”, which prevents the cooling of the liquid. Before use, use a spoon to remove the “peel” from the cup.

Polish Way

Ideal for brewing in the office. To prepare a drink, they take a fine or medium ground coffee. Approximate dosage: 6-7 g per 100 ml of water.


  1. Pour coffee into a heated cup.
  2. If you need a sweet drink – pour sugar.
  3. To taste, you can add spices (cinnamon, cardamom).
  4. Splash hot water so that it only slightly covers ground beans.
  5. Stir vigorously with a spoon for 10-15 seconds.
  6. Pour the rest of the water into the cup, mix.
  7. Cover the cup with a saucer.
  8. Insist 3-4 minutes.

Sugar is allowed to be added to the finished drink, but then when stirring with a spoon you have to shake the thick, and drinking coffee with a suspension is unpleasant. The thickened moistened water is intensively stirred so that the “flowering” takes place, foam forms, and when insisted the grains settle faster to the bottom.

So that the spices do not float to the surface of the finished drink, they are mixed with dry ground beans before water is poured into the cup.

Cuban Way

It differs from Polish in only a few details:

prepare a large portion (about 200 g), mainly in a glass beaker;
the drink must be strong, so for 100 ml of water you need 8–9 g of ground coffee;
use cane sugar;
if desired, add 1-2 teaspoons of rum to the finished coffee.

Brewing Coffee in The Microwave

The method is similar to making coffee in a cezve. To obtain a drink of moderate strength, 6-7 g of fine or medium coffee per 100 ml of water is required. If possible, it is recommended that after preparing the drink pour it into a clean cup.


  1. Pour coffee into a large heat-resistant cup.
  2. Add sugar and spices if desired.
  3. Splash a little cold water, mix vigorously for 10-15 seconds.
  4. Add cold water so that its level is 3-4 cm below the edges of the cup, mix.
  5. Put the vessel in the microwave.
  6. Watch carefully. As soon as the foam approaches the edges of the cup – turn off the microwave, remove the coffee.
  7. Cover the cup with a saucer, wait 3-4 minutes.
  8. Pour coffee into a clean, warmed cup.

Cold Way To Brew Coffee In a Cup

In the summer I want something cool. At home, preparing it is very simple:

  1. In the evening, pour in a cup of ground beans at the rate of 10 g per 100 ml of water.
  2. To fill with water.
  3. After 12 hours, cold coffee is ready, you do not need to breed it.

At work, such a drink can be prepared if there is a refrigerator or at least a cupboard. At lunch or before leaving work, coffee is poured into a jar with a lid and poured with water. The next day, the drink is ready to drink.
